    二、研究领域

    主要从事食源多糖的结构特征及其生物活性评价。热带特色果蔬来源多糖的制备及结构鉴定,基于多糖的结构,揭示其在肠道的代谢转化途径及其与肠道菌群、免疫系统的互作关系,促进食源多糖产品的研发。

    相关研究先后在Trends in Food Science & TechnologyJournal of Agricultural and Food ChemistryFood Hydrocolloids等食品顶刊发表论文10余单篇被引用最高达64次,参与申请专利1
