2.蛋白质精准修饰及自组装行为研究。阐明定向修饰与蛋白功能特性和生物活性的构效关系,以分子修饰为自组装驱动力,制备尺寸、结构可控的超分子蛋白组装体,建立“蛋白修饰位点-空间结构-宏观功能”的调控策略。
3.动物源食品的品质调控与预制加工过程的组分互作研究。掌握动物源食品加工及贮藏过程的品质调控关键技术,针对性研发适用于冻藏、冷鲜及热加工过程蛋白及脂质氧化、内源酶抑制的抗冻剂、抗氧化剂等核心调控因子。解析加工及贮藏过程的肌肉蛋白、内源酶及微生物协同作用对品质、风味及营养的影响规律。形成与高效物理场联用的协同调控加工技术以及工业化应用技术。
